Leftover Thanksgiving Turkey Scrambled Egg Breakfast

Thanksgiving provides a surplus of leftovers and the turkey sandwich can only go so far. Why not mix it up a little and give your family a meal made of leftovers that will have them asking for seconds.

This leftover Thanksgiving turkey scrambled egg breakfast is so delicious you may even create a new Thanksgiving tradition.

Ingredients

  • 8 Egg whites
  • 2 Cups shredded and diced leftover turkey
  • 2 Cups shredded spinach
  • 1 Tomato, chopped
  • 1 Clove garlic, minced
  • Salt to taste
  • Pepper to taste

Scramble egg whites and then add the turkey.

Sauté tomatoes, spinach and garlic and add to the egg and turkey mixture.

This breakfast can be served by itself or it can be tucked into a pita pocket or a wrap for a more filling meal.

This quick and easy way to use your Thanksgiving turkey leftovers provides six servings and is easy to double to serve more and use up more of your Thanksgiving turkey.

While the above recipe is a low calorie and healthy alternative, you can spice things up a bit more by adding additional leftovers to the mix. Some reheated stuffing is the perfect addition to a leftover Thanksgiving turkey scrambled egg breakfast and it’s more filling as well.
