Thanksgiving Recipe Makeover: Mashed Potatoes

Many recipes for mashed potatoes call for butter and heavy cream and even parmesan cheese. Reduce the fat and amp up the flavor by using chicken broth and substituting full fat dairy for lower fat sour cream.  This mashed potatoes side dish will be the hit of your Thanksgiving feast. Your guests won’t notice the difference but their waistlines will.

Ingredients 
  • 8 baking potatoes
  • 1/2 c. chicken broth, heated
  • 2 T. reduced-fat sour cream
  • Salt, to taste
  • Freshly ground pepper, to taste
Instructions
Peel and slice the potatoes into 1 ½  inch chunks. Place the potatoes in a large heavy pot. Cover the potatoes with cold water that has been salted. Bring to a boil and then simmer on low heat. Keep the pot partially covered and simmer for about 10 to 15 minutes and then drain well. Remove the pot from the heat and add the potatoes back to the pot. Mash the potatoes and stir in broth gradually until the mashed potatoes are at the desired consistency.  Mix in the sour cream and season to your taste with salt and pepper. Serves 6.
